Christmas Eve’s Appetizers / Amuse Bouche:
1. Cured reindeer with gin-infused blueberries
2. Chanterelle cream on toast
Starter
1. Two kinds of herring
2. “Gubbröra” (Swedish egg and anchovy salad) on dark bread
3. Vegetarian Christmas herring on dark bread
Main Course
1. Christmas plate with honey-glazed spare ribs, elk meatballs, and game sausage with red cabbage and fig salad, and boiled potatoes
2. Salmon fillet with skin, Brussels sprouts, and hazelnuts, beurre noisette, boiled potatoes, and roe sauce
3. Oyster mushrooms with cheese sauce, potato cake, side salad, and saffron vinaigrette.
